Food fermentation has been used for thousands of years, but knowledge of its health benefits for the gut microbiome remains limited. Researchers are creating new plant-based foods to investigate the effects of different types of bacteria on health and the environment, harnessing the help of volunteer bakers in different countries.

3D printing has seen huge growth in sectors including health in recent years, but a small Belgian start-up called Materialise pioneered its use in medicine 30 years ago. Its team began producing accurate, tangible models of human bones and organs based on medical images, providing substantial help to surgeons planning complex procedures.
